Vincent Carême has established himself as one of the benchmark growers in Vouvray, building on his domaine with a clear focus on site expression and viticultural precision. Farming is certified organic with biodynamic principles applied, and his work in the vineyards—particularly on Vouvray’s clay-limestone (tuffeau) slopes—prioritizes low yields, balanced ripening, and optimal phenolic maturity in Chenin Blanc. His approach reflects a broader shift within the appellation toward terroir transparency and disciplined, low-intervention cellar practices.

In the cellar, Carême’s wines are defined by clarity, structural tension, and stylistic range, spanning sec, demi-sec, and méthode traditionnelle bottlings. Fermentations are carried out with indigenous yeasts, with careful élevage in a mix vessels to preserve precision while building texture.
